Watermelon Sherbet

Ingredients:

  • 4 cups diced seedless watermelon
  • 1 cup white sugar
  • 3 tablespoons lemon juice
  • 1 (.25 ounce) envelope unflavored gelatin
  • 1 cup chilled heavy cream
  • 1 dash salt
  • 1/4 cup cold water

Instructions:

In a large bowl, mix the watermelon, sugar, lemon juice, and salt, and stir well. Cover with plastic wrap and store it in the refrigerator for half an hour.

Then, blend it in a blender until smooth, and return it to the bowl.

In a saucepan, pour the cold water, sprinkle the gelatin, and let it stand for a minute.

Then, cook over low heat for 2 minutes.

Add the gelatin mixture to the blended watermelon mixture, add the heavy cream, and beat with an electric hand mixer at medium speed until you get a fluffy mixture.

Next, transfer it to an ice cream maker, and freeze it until it reaches “soft-serve” consistency.

Transfer the ice cream to a suitable plastic container, cover with plastic wrap, and seal.
